CHICKEN FRITTERS

Ingredients:
4 cups Chicken, finely diced
4 eggs
1/2 cup Mushrooms (optional)
1/2 cup Celery, chopped
4 cups Mashed Potatoes
1 Onion, chopped

Directions:
Cook onion and celery till soft. Mix all together. Add milk to moisten. Fry in hot oil.


HOT CABBAGE SLAW

Ingredients:
9 cups Cabbage, finely shredded
1 egg
2 Tbsp. Honey
1/4 cup Vinegar
1 tsp. Salt
Pepper to taste

Directions:
Shred cabbage finely and add boiling water to cover. Cook 5 minutes. Drain. Beat egg and add honey, vinegar, salt and pepper. Add to drained cabbage. Heat thoroughly 5 minutes. Add 1/2 tsp. caraway seeds if you like.
