 Montana High Plains WHEAT BERRY CHILI
Real whole grain wheat berries instead of beans make the base of this excellent chili with recipes for both meaty and vegetarian versions.
This soup supplies over 31 grams of whole grain per serving and meets the criteria as an “Excellent Source” of whole grains.
Ingredients:
Packaged Wheat berries
Montana High Plains Chili seasoning packet
Additions:
1 lb. Ground Turkey
1 14 oz Can Beef Or Vegetable Broth
1 28 oz Can Tomato Pieces
Optional: 1/2 Cup Red Wine
Cooking Directions:
Soak wheat berries in cold water overnight, then bring to a simmer in a pot of fresh water for 50 minutes.
In a separate pot, sauté ground turkey in 2 T. oil. Stir in the contents of seasoning packet, and, if desired, add the red santaka chili pepper for more heat.
Add broth, drained wheat berries and tomatoes, and simmer 1 hour. If desired, add optional wine and serve with grated cheddar cheese, or sour cream, on top, and round up the campers for this hearty whole grain chili!
Vegetarian Version:
1 Large Baby Eggplant, Diced, Not Peeled.
1 Large Sweet Onion, Chopped.
Cut up one large eggplant into 1/2 inch cubes, lightly salt and let stand fifteen minutes.; Heat 4 T oil in 4 quart pot, add eggplant and one large sweet onion chopped, tossing and turning to brown lightly. Add broth, wheat berries and tomatoes and simmer 1 hour. Serve with grated cheese, if desired.
