Italian seasonings with lentils give this show-stopper soup its dynamic flavor with or without sausage added. Add tomatoes, sausage, zucchini and red wine. High fiber makes it a low carb soup.

Ingredients: Red & Green Lentils, Vegetable/Seasoning Packet; Gluten-free

Additions: 1 T. Olive Oil 1 lb. Mild Italian Sausage 12 C. Beef Broth 2 Medium Zucchini, diced 1 28 oz. Can Chopped Tomatoes 1 C. Red Wine

Cooking Directions: Crumble and brown sausage in oil in a 6 or 8 qt. pot. Rinse, drain and pick over lentils. Add lentils, vegetable packet and broth to pot. Bring to a boil, reduce heat and simmer covered for 1 hour, stirring occasionally, add zucchini after ½ hour. Add tomatoes and wine to soup. Simmer uncovered for 15 minutes.

Preparation Time: 15 minutes
Cooking Time: 1.25 hours

For variation, a box of frozen, chopped spinach may be substituted for the zucchini! This is a beautiful country supper!
