A hint of curry makes this creamy classic a lovely appetizer or a luncheon soup. Add shredded cheddar cheese and cream.

Ingredients: Broccoli, Onion, Carrots, Wild Rice and Spices.

Additions: 5 C. Chicken Broth 1 C. Cream (Heavy, Half & Half or Milk) 1 C. Shredded Cheddar Cheese (4 oz.)

Cooking Directions: In a 4 qt. pot bring broth to a boil. Add Soup Mix, lower heat and cover, simmer 30 minutes. Add cream and continue cooking on low 5 minutes more. Stir in cheese, allow to stand 5 minutes and service.

Serves: 4-5
Cooking Time: 45 minutes

Inventive Soup Variations: For a summertime soup, this soup can be served chilled. Prepare as above, but simmer for 45-60 minutes and omit the cheese. Cool completely on stovetop. Chill in refrigerator 2 hours or overnight. For an elegant presentation, puree soup using a food processor, food mill, or hand blender. Peel, remove seeds, and dice one large cucumber. Sprinkle a spoonful to each bowl before serving.
