Oregon Lakes WILD RICE AND MUSHROOM Soup


A classic soup made hearty and elegant with the addition of broth and cut up chicken breast.

Ingredients: Wild rice, Mushrooms, Vegetables and Herbs.

Additions: 6 C. Chicken Broth (or Part Clam Juice) 1 - 14 oz. Can Diced Tomatoes (with garlic if available) or Rotel Canned Tomatoes Optional: I C. Cubed Ham, 1 Lb. Medium Shrimp, Shelled and Deveined (or Crab, Clams, Scallops or Crayfish)

Cooking Directions: In a 2 or 3 quart saucepan bring broth to a boil. Add dried soup mix ingredients. Lower heat and simmer covered 15 minutes. Add chicken and simmer 10 minutes longer. Add wine or cream if desired. Let stand five minutes and serve.

Serves: 4-5
Cooking Time: 30 minutes

Inventive Soup Varations: We call this variation the Hunter’s Bounty. Because wild rice and mushrooms are natural accompaniments to any fowl substitute pheasant, quail or duck instead of chicken for a sophisticated soup supper.
