Mississippi Delta TOMATO RICE Soup
Perfect with a grilled cheese sandwich or serve it more elegantly with the addition of shrimp and feta cheese.
Ingredients:
Tomato Rice Mix
Additions:
6 C. Chicken Broth
1 28 oz. Can Crushed Tomatoes in Puree
Cooking Directions:
Bring broth to a boil in a 3 or 4 qt non-aluminum pot. Add mix to broth. Add tomatoes and bring soup to a boil. Reduce heat and simmer slowly, covered, for 20 minutes.
Serves: 4-5
Cooking Time: 30 minutes
Inventive Soup Varations:
Option 1: Add 3/4 lb. fresh shrimp shelled and deveined. Simmer 2-3 minutes until opaque. Garnish with 1/2 C. crumbled feta, blue or parmesan cheese. 2. For a cream of tomato soup, gently heat 2 C. cream (or buttermilk, for a more piquant taste) and add to tomato base before serving. 3. Or, for a spicier soup add 1/4 tsp. cayenne pepper.
Option 2: May be served chilled for an elegant summertime soup. Prepare according to cooking instructions. Simmer soup 30 minutes. Cool completely on stovetop. Refrigerate for 2 hours or overnight. Stir in cream before serving. Garnish with fresh basil and enjoy!
