Connecticut Cottage CHICKEN NOODLE Soup
Delicately seasoned with dill, add chicken breast pieces for this family favorite.
Ingredients:
Noodles (semolina & egg solids), vegetables, garlic, herbs
Additions:
2 T. Butter or Margarine
6 C. Chicken Broth
1 Whole, Boneless Chicken Breast, cut up into small pieces
Optional: Extra Chicken Parts (2 wings or a leg)
Optional: 1/4 C. White Wine
Cooking Directions:
In a 3 or 4 qt. pot, toss vegetables lightly in melted butter over low heat. Add broth, turn up heat and bring to a boil. Add chicken breast pieces, reduce heat and simmer covered for 15 minutes. (For an enriched broth, simmer optional extra chicken parts for 30 minutes in the 6 C. broth. Remove parts, reserve broth, and proceed with recipe above).
Bring back to a full boil and add noodles. Reduce heat and simmer uncovered for 10 minutes. Stir in wine, if desired. Turn off heat and allow it to cool a few minutes before serving.

Inventive Soup Variations:
Create a tantalizing Georgia Peanut Soup by adding 2 t. curry powder with the vegetable mix and 1/2 C. of your favorite peanut butter in place of the wine.
